These smooth, protein-rich cheesecake bars feature a vibrant cherry-chia jam swirl, fresh blueberries, and a zesty lemon cookie base—each serving contains fewer than 200 calories!
That name might sound elaborate, and it truly captures the essence of these bars. Initially, I considered naming them "Red, White, and Blue Cheesecake Bars" to reflect their festive appearance, but a few details led me to reconsider:
The cherry jam turned out more purple than red, so the color scheme isn't perfectly patriotic—though still appealing.
Beyond occasional holidays in the U.S., how often do people actually search for red, white, and blue desserts?
A simpler title wouldn't convey the full range of flavors in these wholesome bars.
Therefore, we're keeping the name "Healthy Cherry Swirl Blueberry Cheesecake Bars."
Now, let's explore what makes these bars special.

What Makes These Cheesecake Bars Lighter?

While traditional cheesecake is delicious, it often comes with high amounts of calories, sugar, and saturated fat. This version delivers the same creamy satisfaction with significantly less of each.
Here’s how we keep it balanced:
Using one block of cream cheese instead of two.
Opting for reduced-fat cream cheese—avoiding non-fat to maintain texture.
Replacing the second cream cheese block with plain Greek yogurt (2% fat recommended for creaminess, though fat-free works).
Using egg whites rather than whole eggs.
Skipping sour cream—the yogurt provides a pleasant tang.
Omitting added sugar in the crust, as the lemon cookies already contain sweetness.
Reducing butter to just three tablespoons.
That’s quite a list of adjustments! Yet these bars remain luxuriously smooth and are always well-received—especially when guests learn they’re a lighter option.

Alternatives for the Cherry-Chia Jam

I prefer using a homemade cherry-chia jam recipe, which is lower in sugar and often already in my refrigerator.
If you’re short on time, a store-bought jam without added sugars is a fine substitute.
If cherry isn’t your preference, raspberry or strawberry jam would work beautifully—and offer a brighter red hue.
Note: If preparing the jam from scratch, be sure to blend it smoothly so it swirls easily into the filling.

Substitutes for the Lemon Cookies

I adore lemon flavors, so Trader Joe’s seasonal Meyer Lemon Cookie Thins have become a pantry favorite.
Other lemon cookies, such as lemon wafer varieties, can be used, though they may not provide the same pronounced citrus flavor.
Lemon sandwich cookies (with the filling removed) are another option, or you can simply use a classic graham cracker crust—replace with ¾ cup of graham cracker crumbs if preferred.

Required Ingredients

For the Crust:
30 Meyer Lemon Cookie Thins (about ¾ cup crumbs)
3 tablespoons melted unsalted butter
For the Filling:
8 ounces reduced-fat cream cheese, softened
¾ cup plain Greek yogurt (2% fat used here)
2 teaspoons pure vanilla extract
2 egg whites
¼ cup sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 tablespoon cherry-chia jam
¼ cup blueberries

Step-by-Step Preparation

Step 1: Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper. Allow cream cheese to soften and melt butter.
Step 2: Process lemon cookies into fine crumbs. Combine crumbs with melted butter, then press mixture evenly into the prepared pan.
Step 3: Bake crust for 8 minutes. Remove and let cool slightly.
Step 4: While crust bakes, beat cream cheese until smooth. Add yogurt, vanilla, egg whites, and sugar, mixing until combined. Stir in flour, then lemon juice, mixing just until incorporated.
Step 5: Pour filling over crust and spread evenly. Dot with small amounts of jam, then use a knife to swirl it gently into the filling—avoid disturbing the crust. Scatter blueberries over the top, pressing them lightly into the batter.
Step 6: Bake uncovered for 20 minutes. Cover with foil and bake another 10–15 minutes, until set but still slightly jiggly in the center. Remove from oven.
Step 7: Let cool, then refrigerate for at least 3 hours before slicing and serving.

The History and Population Dynamics of the Scarlet Ibis (Eudocimus ruber) in Southern and Southeastern Brazil

The Scarlet Ibis (Eudocimus ruber) is primarily distributed in northern, southeastern, and southern Brazil. While 20th-century records declined sharply in the latter two regions, the population began recovering in the early 1980s. This paper synthesizes the species’ distribution history in southern/southeastern Brazil and identifies key drivers of its apparent disappearance and reappearance: anthropogenic impacts combined with inherent ecological traits.
